Winter Fennel Salad with Creamy Dressing
- Ingredients for creamy fennel dressing:
- ½ cup plain yogurt
- 1 tablespoon dijon mustard
- 2 teaspoons Morton & Bassett Garlic Powder
- 1 teaspoon Morton & Bassett Fennel Seed
- 1 tablespoon olive oil
- ½ lemon, juiced
- Salt & pepper to taste
- Ingredients for salad:
- 2 large beets, roasted & thinly sliced
- 4 cups radicchio, torn roughly
- ½ cup fresh fennel, thinly sliced
- 8-10 slices of clementine
- Crushed pistachios for topping
- 1 tablespoon fennel seeds for topping
- Fresh fennel sprigs for topping
Combine salad ingredients & top with dressing. Toss, add toppings, and enjoy!
